The mother of invention. And that’s exactly why these no-bake cookies were created. My parents-in-law are trying to eat less sugar and processed carbohydrates for health reasons. But knowing our family, we still want to have a sweet treat after dinner! So I strove to make a dessert that fit our dietary requirements.Also, it is over 100 deg F in Texas every day so that last thing I want to do is crank on the oven. Enter the no-bake cookie! The great thing about these cookies is that you put them in the fridge to harden. No oven, no problem! Plus it’s kinda nice having a cold sweet treat straight out of the fridge on a hot day.

The Easiest Recipe Ever!

These no-bake cookies couldn’t be simpler. They only use 7 ingredients and you just mix them in a bowl. Plus, this would be a great recipe to involve your kids!Once the batter is mixed, you can use a small ice cream scoop to scoop out portions of the batter and place them on a tray lined with parchment paper. Then pop the tray in the oven to let the cookies firm up.The other thing I love about these no-bake cookies are the substitutions. Instead of regular white or brown sugar, you can use stevia. Also, butter is replaced with coconut oil. The most notable substitution is the use of coconut flakes and slivered almonds. Typically in a no-bake cookie recipe, oats are often used to give the cookie texture and shape. In this case, I swapped that out for a mixture of coconut flakes and slivered almonds. Both of these ingredients give more than enough texture and shape to the cookie.

The Taste Test

When I served these cookies to my parents in law, I waited patiently for the verdict. Would they like it?..........Yes they did! The combination of chocolate and peanut butter is always a hit because of the contrast of sweet and salty. Is there anything better than a sweet and salty snack? Add in that chewy and crunchy texture from the coconut and almonds and this cookie goes to another level. Be warned, since these are no-bake cookies, if you leave them out of the fridge, they will get a little melted. So I recommend to keep them in the fridge until you’re ready to eat. Since these cookies are filled with protein and healthy fats, they are also surprisingly filling. This makes them a really good snack since, if you eat one, you will probably not want to feel like gorging yourself on a whole plate of them. Chocolate Coconut Peanut Butter No-Bake Cookies

A super easy and delicious no-bake cookie that has no sugar! Inspired by the Keto No Bake Cookies from How to This and That.

Ingredients:

  • 1 tbsp stevia
  • 2 tbsp coconut oil
  • ⅔ cup peanut butter
  • 1 tsp vanilla extract
  • 2 tbsp raw cacao powder
  • 1 cup unsweetened coconut flakes
  • 1 cup almond slivers

Instructions:

  1. In a large bowl, add coconut oil and if not a liquid, heat up in the microwave in 20 second increments till it melts.
  2. Add the stevia to the coconut oil and stir well.
  3. Add the peanut butter, vanilla extract, cacao powder, coconut and almonds into the coconut oil/stevia mixture.
  4. Fold all the ingredients together very well to create a really thick batter. The batter should be so thick that it stays clumped together.
  5. Line a cookie sheet with parchment paper.
  6. Using a small ice cream scoop, or two spoons, take scoops of the batter and place onto the cookie sheet. Flatten down the top of the cookie slightly.
  7. Place the tray in the fridge for at least 30 mins to allow the cookies to firm up.

Keep leftovers in the fridge for up to one week.
