I Love Snacks!

Snacking is one of my favorite hobbies! Ok, so maybe it isn't exactly a hobby, but I do think there is a certain art to having delicious and healthy snacks ready for when those hunger pangs strike.

Snacks are also that must-have item in my bag when I am running errands with the kids or when traveling. There is nothing worse than being away from home and not having a snack! It comes in handy to help occupy little kiddos as well as, obviously, being a much needed way to fuel the body.

So, to celebrate my love of all things snackable, plus the launch of my course, 30 Minute Meal Prep, I wanted to share with you 3 Easy Meal Prep Snacks!

All these snacks can be prepared ahead of time and can be easily stored so that you can grab them and go, whenever you're running out the door or just when you're super hungry and need a quick and delicious snack.

3 Easy Meal Prep Snacks

  1. Cheezy Garlic Herb Popcorn

Popcorn is one of the best crunchy snacks! Plus, it is actually really high in fiber, which helps digestion. I use a special seasoning blend on this popcorn which gives it a wonderfully cheesy flavor, without the cheese. Pairing this cheesy flavor with that savory bite of garlic powder and the deep, herbal scent of oregano, this popcorn is seriously addictive! To make this a completely vegan snack, substitute the dairy butter for a non-dairy butter or even, coconut oil.

2. Cherry Almond Protein Bars

These protein bars, are the ones that I get the most compliments on! I have served them at several events and have always gotten such awesome feedback from people!

I love the combination of the chewy dried cherries and the crunch from the almonds. That contrast in texture and flavor keeps you coming back for one more bite. And maybe another... and another....

Pro tip: to make these protein bars a little easier to travel with, you can also shape them into balls.

3. Roasted Nuts with Rosemary, Garlic and Ancho Chili

I recently made these perfectly golden, crunchy and aromatic nuts for a party, and a girlfriend of mine took the whole bowl from the buffet so she could finish them!

These roasted nuts have so much delicious flavor but they couldn't be simpler to make. You just need one bowl and few ingredients that you probably have in your pantry right now.

Once the nuts have roasted and cooled, you can easily package them into single servings and place in several resealable bags. Then you can easily grab them and run out the door to whatever event you have happening next.
