So you are having a get-together, be it a coffee morning, afternoon soiree, or evening meal and you start to stress about the food and drink you are offering. Ideally, you want to serve something that will be impressive but doesn’t cause you the ultimate stress before their arrival. The good news is, that such options do exist and if you read on you can choose from the list of fun, impressive, yet simple snack options to impress your guests and be the best host going.

Thai iced tea

Thai iced tea is perfect when hosting a coffee morning and you want to pull out all the stops for your guests. Or perhaps it is a hot day and no one quite fancies the idea of sitting around and drinking hot tea or coffee. What is particularly favorable about this drink when hosting is that it can be made in advance, stored in the fridge, and then poured over ice when your guests arrive. Thailand’s infamous iced tea is an impressive orange-colored sweet drink that uses Thai tea leaves, sweetened condensed milk, sugar, evaporated milk, and lots of ice to keep you cool. 

I put my healthy spin on Thai Iced Tea by swapping the sweetened condensed milk with unsweetened coconut milk, and use raw honey to add a touch of sweetness. I also add a pinch of ground turmeric for its anti-inflammatory properties and to bring a hint of golden color.

Mini waffles 

Sticking with a coffee morning, brunch, or even dessert mini waffles are a fantastic offering and oh so easy to make. What is more, they are versatile enough to fit most occasions. All you need to do is batch cook a bunch of waffles using your waffle iron and divide them up into miniature 2x2 waffles. You can then serve up these firm favorites with condiments of your choice. It could be melted chocolate, maple syrup, cream, fresh fruits, berries, or bacon whatever you and your guests fancy most from this convenient yet impressive little snack.

Bite-sized tacos 

Everybody loves tacos and these bite-sized versions make for the perfect party nibbles and can be served up in a variety of ways to suit your guests. You can buy your tacos pre-made or make your own using flour tortillas. The most efficient way is to cut your tortillas using a cookie cutter and link the inside of a cupcake tin with the cut-out tortilla, brush them with a little butter and bake them in the oven until they are lightly browned. Once cooked, allow them to cool and make the filling of your choice. This could be the traditional ground beef, grated cheese, refried bean combo or change things up with some pulled chicken or veg-only option. Just don’t forget to offer up the salsa (this is my fave salsa!), guacamole, and sour cream and you have tasty mini tacos, but without the mess. 


Strawberry Slushie

This is the perfect summer drink for a BBQ or afternoon get-together, and it is so simple. All you need is plenty of strawberries, crushed ice, lemon juice, and monkfruit sweetener or stevia for sweetness. To make this show-stopping drink you first need to puree your strawberries in a blender, you then add the extra ingredients to the mix and blend once again until smooth. It couldn’t be any simpler. To really impress your guests, serve up in frosted daiquiri glasses with a spring of basil on the top.  


Caprese salad skewers 

If you are looking for an entree for your evening gathering then these Caprese salad skewers are perfect, and oh so simple to make. All you need to do is thread a mini mozzarella ball, cherry tomato, and a piece of fresh basil on a skewer, drizzle some olive oil and/or balsamic vinegar and you have yourself a fresh and flavorful snack. 


Loaded bread 

For a slightly heavier snack, loaded bread is perfect. You’ll need a French stick (or two, depending on the number of guests). Simply cut the bread into rectangular slices and place it on a baking tray. You can then top the bread with a variety of ingredients to suit your guests before placing it under the grill for around five minutes. For some inspiration here are some possible toppings;

  • Cheese, OK cheese will probably form part of the topping for every piece of loaded bread you make lol: There are many dairy free options available now too!

  • Olives

  • Sun Dried tomatoes 

  • Rocket / Arugula

  • Chili flakes 

  • Cured meats 

  • Chili jam 

  • Spring onions 

  • Roasted peppers

Fruity Pizzas 

This is the absolute perfect snack for the sweet-toothed guests and one guaranteed to impress. All you need is a pizza base and some different fruity options. Here are a couple of variations:

Chocolate Banana Pizza: Roll out your pizza base, sprinkle it with cinnamon and monkfruit sweetener/stevia to give it that sweetness, and bake in the oven as per the instructions of the pizza base. Once cooked, remove and smother with lashings of your favorite hazelnut chocolate spread and sliced bananas. To really pull out all the stops, add some chopped hazelnuts and shredded coconut and you have yourself a delectable sweet snack. 

White Chocolate Peach Pizza: Pre-cook your pizza base without any toppings till lightly golden brown. Spread over some softened cream cheese mixed with some honey for sweetness. Slice some fresh peaches in to thin slices. Lay them over your pizza base in a decorative pattern. Drizzle over some melted white chocolate then scatter some torn mint leaves on top.
