Tina and I met through an online entrepreneurship program and supported each other as we grew our businesses. When the online program had a meet up in the US, Tina and I were finally able to meet in person and we totally hit it off!

Tina is an incredible vocalist and vocal coach based in Sydney, Australia. She helps lots of kids who want to improve their singing and even has music programs for toddlers.

That is why Tina’s newest venture is so wonderful! Tina has just released a brand new children’s book called My Lola. The word Lola means grandmother in the Filipino language.

My Lola is a heartwarming story about the feeling of going to your grandmother's house to meet family, cook and eat a big meal. The illustrations are absolutely gorgeous! And Tina also includes a digital download of songs you and the kids can learn to singalong with the book.

The other reason that I love My Lola is the food! Tina writes about all kinds of Filipino food, including Lumpia, or Spring Rolls. 

Lumpia is typically filled with some kind of meat and vegetables, then rolled in an egg roll wrapper and fried. 

This sounded absolutely delicious, so when Tina asked me if I wanted to learn how to make lumpia, I jumped at the opportunity

Tina’s Famous Lumpia

Tina Bangel shares her family's favorite Lumpia, or Filipino Spring Roll recipe. Quick and easy to make, and full of delicious Filipino flavors.

  • 1 lb ground meat (such as beef, pork, deer etc.)
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced carrots
  • 1/2 cup finely diced celery
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp pepper
  • Egg roll wrappers
  1. In a large bowl, mix together the ground meat, onion, carrots and celery.
  2. Once well combined, add the soy sauce, salt and pepper, as mix thoroughly again.
  3. Take an egg roll wrapper, and place in a diamond shape on your workspace.
  4. Scoop a tablespoon of the mixture and place it close to the corner of the egg roll wrapper closest to you.
  5. Roll the corner of the egg roll wrapper closest to you, up over the filling.
  6. Fold the left and right sides of the egg roll wrapper over the filling.
  7. Starting from the side closest to you, roll the filling inside the egg roll wrapper, like a log, up to uppermost corner of the egg roll wrapper. See the video for a visual depiction of this process.
  8. Repeat with remaining mixture and egg roll wrappers.
  9. Heat a large frying pan with oil at least 2” deep over medium heat.
  10. When the oil is hot, but not smoking, carefully add a few of the lumpia and fry till golden brown on all sides, turning occasionally, and the filling is cooked through.
  11. Serve with sweet chili sauce, ketchup/tomato sauce.

Tips: You can add any of your fave veggies to the filling.
You can wrap a batch of lumpia the day before, then fry the day of the event.
You can also choose to cook the filling first, allow it to cool, then wrap the lumpia.
