Hey guys! We are back from a fun and eventful Spring Break! How was your Spring Break? Hope you had an awesome time!

Like most people, when you go on vacation, it can be so easy to get off track with your healthy eating goals. You’re away from home, you're eating out all the time, you’re constantly on the go, and the added peer pressure from family members can make anyone fall off the bandwagon.

But don’t worry! Today’s recipe is a super simple and delicious salad that will get you right back on track, but without sacrificing flavor!

Asian Flavors

This Spicy Sesame Zoodle recipe is one of my go-to super quick and super delish recipes. It combines my favorite asian flavors, sesame and chilies, in the dressing of the salad.

Spicy Sesame Zoodle Salad

Sesame oil is one of my favorite secret ingredients. I use it all the time when I want to give a dish a very distinct asian flavor. Pairing this with a little heat, in this case from the sambal oelek, keeps your taste buds on their proverbial toes, which makes the dish super interesting and keeps you coming back to take another bite.

The other great thing is that this asian dressing is super versatile! You can actually use it with your favorite vegetables. I’ve tried it with carrots and it worked great. I also think it could be a great dressing for cucumbers too.

Quick and Easy

When you’re trying to get back on track with healthy eating, the last thing you want to do is spend hours in the kitchen making a complicated meal! This Spicy Sesame Zoodle salad is so easy! The dressing is only 4 ingredients, and you simply mix it with zoodles. That’s it!

Spicy Sesame Zoodle Salad

I like to pair this salad with a lean protein, like a pan sauteed or grilled chicken breast or even fish. This creates a well rounded meal: your protein of choice as well as fiber, micronutrients and healthy fats from the salad. These kinda meals will help you feel fuller for longer as well as fueling your body with all the nutrients it needs to get you through the day!

Spicy Sesame Zoodle Salad

A quick and easy salad, packed with bold asian flavors!

Ingredients:

  • 1 medium zucchini
  • 1/4 tsp garlic powder
  • 1/2 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp sambal oelek, (or other chili sauce of choice)
  • Optional toppings: sesame seeds, cashews, or green onions

Instructions:

  1. Spiralize the zucchini and set aside. If you don't have a spiralizer, just use a vegetable peeler to shave long thick strands off of the sides of the zucchini till you reach the core. Then repeat on all sides. Set aside.

  2. In a medium sized bowl, mix together the garlic powder, sesame oil, soy sauce and sambal oelek or chili sauce of choice, to make the dressing.
  3. Add in the zucchini and toss together thoroughly with the dressing.
  4. Serve with your fave protein and top with sesame seeds, cashews or green onions, as desired.
