It's Almost My Birthday - and I've got Gifts for You!

Guys! It is almost my birthday! In fact, my birthday is on Sunday and I am so excited about it! Not just because I'm looking forward to a little birthday cake, but also because of the gifts. I don't mean the gifts for me... I mean the gifts for you!

An Unexpected Pivot

This week, I wanted my blog post recipe to be something special for my birthday. So I had this big plan of making ice cream. Homemade protein ice cream is one of my fave things to make because it is sooo easy! Plus its been stinking hot here lately and I definitely needed something to cool me down.

But lo and behold, my ice cream maker did not cooperate! Somehow it is not working properly and this was a total bummer!

I racked my brains thinking about what to make instead. What would be a delicious and healthy birthday treat?!?!

Systems and Smoothies

An idea finally came to me when I was talking to my good friend Dr. Ashley Hampton. She and I just released an awesome podcast episode where we talked about the similarities between entrepreneurial systems and how they can be used in everyday life, especially in the kitchen.

One of my fave systems in the kitchen is meal prepping! I love to get a whole bunch of food ready on a Sunday afternoon to help myself and my family get quick and healthy dinners on the table during the week. I also talked about how you can meal prep one of my fave breakfasts.... smoothies!

I love smoothies for so many reasons! They are so quick and easy to make, filled with nourishing ingredients, there are a multitude of flavors you can make, and you can even meal prep them! I even made a FREE download of my 5 Fave Smoothie recipes with some tips to meal prep your smoothies. One of the recipes in this download is a Salted Caramel Smoothie... yum! I mean, who wouldn't want a healthy and delicious Salted Caramel Smoothie to start the day!

A Special Birthday Treat

The special birthday recipe I came up with is actually using this Salted Caramel Smoothie to make popsicles! Yes! It is literally that easy to make your own popsicles. I had a popsicle mold that I got at my local grocery store but you can also find popsicle molds almost anywhere. Here is one I found on Amazon that has really good reviews.

Now, since this is my birthday recipe, I couldn't forget one of my favorite ingredients... chocolate! So I dipped the popsicles into chocolate! And to really gild the lily, I added birthday sprinkles or an extra sprinkle of salt to the popsicles too!

The Ultimate Chocolate-Covered Salted Caramel Popsicle

One of my fave smoothies made into fun and refreshing popsicles! The combination of Chocolate and Salted Caramel is so decadent that no one will realize that it is actually healthy! The Salted Caramel Smoothie recipe is from My 5 Fave Smoothie Recipes FREE download.

  • 1 serving Salted Caramel Smoothie without ice, (from My 5 Fave Smoothie Recipes)
  • 1/2 cup stevia sweetened chocolate chips, (such as Lily's)
  • 1 tbsp coconut oil
  • Toppings such as colorful sprinkles and kosher or sea salt
  1. Make the Salted Caramel Smoothie, but without ice, as per the instructions in My 5 Fave Smoothie Recipes FREE download (linked above).

  2. Pour the smoothie into the popsicle molds. Insert the popsicle stick into the popsicle and click into place to ensure a secure seal.

  3. Freeze the popsicles till firm, approx 8 hours or overnight.

  4. Prepare a small tray lined with a non-stick mat or parchment paper. You will use this tray to rest the dipped popsicles on.

  5. When ready to coat the popsicles in chocolate, melt the chocolate chips and coconut oil in a small microwave safe bowl, in 20-30 second increments, stirring well between heating periods. Ensure the chocolate chips and coconut oil are well combined and the chocolate mixture is totally smooth.

  6. Transfer the chocolate mixture into a tall, thin glass or cup so you can easily dip the popsicles into it. Ensure that the mouth of the glass/cup will be big enough for the width of the popsicle.

  7. Carefully remove a popsicle from the mold. You will likely have to dip the bottom of the popsicle mold into warm water to release it from the mold.

  8. Dip the popsicle into the melted chocolate mixture to cover all sides. Since the popsicle is very cold, the chocolate coating should start setting up very quickly.

  9. Place the dipped popsicle on the prepared tray and quickly sprinkle on the toppings you like such as colorful sprinkles or a pinch of salt.

  10. Repeat the last two steps until all your popsicles are coated and toppings added.

  11. If needed, return the tray to the freezer to finish setting up the chocolate coating.

  12. Serve the popsicles on a hot day to cool you off!

Keep remaining popsicles in an airtight container in the freezer.
