Kids in the Kitchen: Banana Bread Muffins

Let’s Cook! 

Boy, there’s been a lot going on in the world lately! A lot of us have kids off from school this week and if you’re anything like me, you’re probably wondering what the heck you’re gonna do to occupy them while they are at home all day!

To help you out, I’m launching a new series to help kids learn to cook. It’s the Kids in the Kitchen series! Each day I’ll be in the kitchen with one or more of my kids, walking you through a quick and easy recipe that kids will love to cook and eat. 

Kitchen Rules

If you're ready to start teaching your kids how to cook, I wanted to share a few simple guidelines to help make the process a little easier for you (and them!)

1. Wash your hands

Before cooking, always wash hands thoroughly and keep hands away from your face and hair during cooking. This is something that you'll probably need to remind the kids of multiple times. It's just part of the deal!

2. Plan to make a mess and clean it up

Making a mess in the kitchen is part of the fun! Just like teaching kids to cook is an important life skill, teaching them how to clean up is equally important. 

3. Use unbreakable equipment as much as possible

This may be a no brainer but just a reminder, in an effort to save your sanity, please use as many unbreakable kitchen tools as possible!

4. Have Patience and Grace 

Some kids may have an affinity to cooking and some may not. That’s ok! Be patient with the kids and patient with yourself as you try to cook new recipes and teach them new skills. Enjoy the process! And if your kids stop and don’t want to cook or help, that’s ok too!

I asked my friend, Susie, what kind of recipes she wanted to see this week and she requested some healthy breakfast recipes that are higher in protein.

So in today's show, my sons and I made a version of the Healthier Banana Bread, but in muffin form aka Banana Bread Muffins!

Banana Bread Muffins

These handheld breakfast goodies are made with almond flour, which increases the protein and healthy fats content.

I also wanted to let the boys personalize these muffins by topping them with their choice of delicious toppings. That is one of the keys to cooking with kids. If they feel like they have ownership of the recipe, they are more likely to want to eat and really enjoy it!

Banana Bread Muffins

These quick and easy muffins are the perfect way to get your kids in the kitchen! Plus they can personalize their muffins to make them extra special!

  • 1 large banana
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1 tbsp monkfruit sweetener, ( or sweetener of choice)
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 large egg
  • 1/8 cup coconut oil, (melted and cooled slightly)
  • 1 tsp vanilla extract

Optional Toppings

  • 2 tbsp chocolate chips
  • 2 tbsp chopped pecans
  • 2 tbsp peanut butter chips
  1. Preheat the oven to 350 deg F.

  2. Line a 12 cup muffin pan with 6 muffin liners.

  3. In a large bowl, add the banana and mash very well.

  4. Add in the egg, coconut oil, vanilla, salt, cinnamon, baking powder and sweetener or choice. Mix well.

  5. Add in the almond flour and stir till well combined.

  6. Scoop out the batter into the prepared muffin pan.

  7. Top the muffins with toppings of your choice. Some great ideas are chocolate chips, peanut butter chips, pecans, sunflower seeds, coconut, dried fruit etc. Make them your own!

  8. Bake the muffins in the preheated oven for 15-18 mins, until a toothpick inserted into the center of the muffin comes out clean or with a few moist crumbs attached.

  9. Allow to cool slightly before enjoying!
