When I first arrived in the US, the very first show I ever watched on TV was the Emeril cooking show on Food Network. It was quickly followed up by 30 Minute Meals with Rachel Ray. I've watched shows from Sandra Lee, Sara Moulton, Bobby Flay, Paula Deen and Ree Drummond, to name just a few. Tell me the name of the Food Network show, and I've seen it!

I love the Food Network! Some of my favorite chefs of all time are on that network and they are not only sharing their love of food, they are showing you how to cook in a relaxed and inspiring way.

And guess what? I love food! I love to cook! And I want to teach you how to cook in a relaxed and inspiring way too!

So, just in case you haven't heard, I am hosting my very own LIVE cooking show on my FB group, Get Nourished with Renata! I'll be cooking live from my kitchen every Wednesday at 1 pm CST. Chocolate Coconut Chia Seed Pudding

This week, in the LIVE cooking show, I made a super quick and easy Chocolate Coconut Chia Seed Pudding!

This pudding can be an awesome healthy dessert, or a great way to start the day. It is packed full of protein, healthy fats, fiber and omega-3's. Not to mention, the combo of chocolate and coconut is divine! A match made in heaven!

Chocolate Coconut Chia Seed Pudding

A quick and easy dessert that is delicious and healthy! High in protein, fiber and omega-3's, this pudding can also be a great make-ahead breakfast!

  • 1/3 cup chia seeds
  • 1 to 1-1/4 cups coconut milk, (can substitute for any milk you like)
  • 1 tbsp cocoa powder
  • 1 scoop your favorite Vanilla Protein Powder
  • Additional sweetener, (to taste)
  1. In a large bowl, add the chia seeds, 1 cup coconut milk, cocoa powder and protein powder.
  2. Stir thoroughly till all the powders are fully dissolved and well combined.
  3. If you feel like the mixture is very thick, way more than a pudding consistency, add in the remaining 1/4 cup of coconut milk.

  4. Taste and add more sweetener, if desired.

  5. Divide into 4 small storage containers or individual servings dishes, cover and refrigerate for 2-3 hours. The chia seeds will absorb the coconut milk and create a thick and creamy pudding.
  6. Garnish with fresh berries, a sprinkling of coconut or a few shavings of chocolate. Enjoy!
