Today's Kids in the Kitchen episode is messy and fun! Dean requested that we make one of his favorite recipes, Cinnamon Rolls!

My version of Cinnamon Rolls is not only delicious, it is healthy too. I make mine using gluten free flour (Bob's Red Mill Gluten Free 1:1 Baking Flour is the best!) and refined sugar free too. I also make them without using yeast, so you don't have to wait for the dough to rise. Which means, you can get to eating the cinnamon rolls faster too 😜.

Gluten Free Cinnamon Rolls

If you are making these gluten free cinnamon rolls at home and may not have the exact same ingredients, I wanted to give you a few substitutions that you could use instead. There is always a way to make things work in the kitchen!

Instead of gluten free flour, you can use all purpose flour or whole wheat flour (just use about 3/4 of the amount stated in the recipe since whole wheat flour is very absorbent).

Instead of monkfruit sweetener, you can use regular white granulated sugar if you're not having blood sugar issues. Or you could stevia. For the icing, instead of monkfruit sweetener, I would recommend using confectioners sugar.

Instead of coconut sugar, you can use brown sugar or a brown sugar-stevia mix.

You can also use any kind of butter or milk in this recipe too, whether it be plant or animal based.

Gluten Free Cinnamon Rolls

These gluten free cinnamon rolls are easy to make, delicious and good for you too!

  • 2 cups gluten free flour
  • 4 tsp baking powder
  • 2 tbsp cold butter, (cubed)
  • 3/4 - 1 cup milk of choice

Filling:

  • 3 tbsp softened butter
  • 1.5 tbsp monkfruit sweetener
  • 1.5 tbsp coconut sugar
  • 1 tbsp cinnamon

Icing:

  • 1/4 cup monkfruit sweetener or stevia
  • 2 tbsp corn starch
  • 1/2 tsp vanilla extract
  • 2 tbsp water
  1. Preheat oven to 350 deg F / 180 deg C
  2. Grease a pie tin or other smaller sized oven tray
  3. Mix flour and baking powder together in a large bowl.
  4. Rub in cold butter with fingertips till it resembles bread crumbs.

  5. Make a well in center of the flour mixture, and add in 3/4 cup milk till a soft dough forms. You may need to add in 1/4 cup more milk if dough looks a little dry.

  6. Knead till the dough comes together
  7. Lightly flour the countertop and roll out the dough into an oblong shape.

  8. Spread on 3 tbsp softened butter.

  9. Sprinkle monkfruit sweetener, coconut sugar and cinnamon onto the dough and butter.
  10. Roll the dough into a jelly roll and cut into 12 slices.
  11. Place slices on the prepared tray. You can also let the slices touch so that they rise more.
  12. Bake for 15-20 mins till golden brown.
