A Special Request

Today's episode of Kids in the Kitchen features a special request from my friend, Roberta, and her kids! When I was planning this special cooking series, I asked everyone what recipes they would like to see. Roberta and her kids asked for a strawberry cake. As soon as I heard they wanted cake, I knew I could help!

My version of strawberry cake is actually a mug cake. I love mug cakes because:

  1. Anything in a mug is instantly cozy and more delicious
  2. It stops me from eating the whole cake

(You know you would do it too! LOL!)

This Strawberry Mug Cake recipe is so simple to make. It only takes a couple of minutes to mix together the ingredients and then the cake cooks for 1 minute in the microwave. Then you can eat cake!

The whole reason I started this Kids in the Kitchen series was to have something for kids and parents to do during this time of social distancing. I firmly believe that cooking is a skill that kids can learn and enjoy doing. And what better time to start than right now?

I am so thankful to Roberta and her kids for cooking some of the recipes we've shared during the Kids in the Kitchen series. It truly made my day to see the photos of the awesome food that they made together!

Strawberry Mug Cake

A super simple and delicious vanilla cake with chunks of beautiful strawberries. And it is made in a mug!

  • 1 tsp coconut oil, ( melted and cooled slightly)
  • 1/4 tsp baking powder
  • 1 egg
  • 1 tbsp honey, (or other liquid sweetener)
  • 1 tbsp milk of choice
  • 2 tbsp gluten free flour
  • 2 strawberries, (washed, trimmed and diced)
  • 1/2 tsp vanilla extract
  1. In a large mug, whisk together the cooled coconut oil, baking powder, egg, honey, milk and vanilla extract.

  2. Add in the flour and whisk very well till no lumps remain.

  3. Top the batter with the diced strawberries. You do not even have to mix them into the batter!

  4. Cook the mug cake in the microwave for approx. 1 minute, or till the cake is cooked through but not dried out.

  5. Let the cake cool for a few minutes before enjoying!
