This Honey Balsamic Chicken is a super simple crockpot recipe. It is one of those recipes that is a no-brainer to throw into the crockpot in the morning and let cook all day. It fills the house up with the most delicious aroma and makes you feel super proud and organized that you already have dinner cooking.

Honey Balsamic Chicken

Honey Balsamic Chicken

A quick Crockpot meal to throw together that is full of flavor!

  • 1 onion, (sliced)
  • 3 lbs chicken thighs
  • 3 garlic cloves, (peeled)
  • 1/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1/2 cup chicken stock
  • Salt and pepper to taste
  1. Add the sliced onion to the Crockpot insert.
  2. Lay the chicken thighs on top of the onion slices.
  3. Add the garlic cloves, then pour over the balsamic vinegar, honey and chicken stock.
  4. Cover the Crockpot and cook on High for 4-5 hours, or till the chicken thighs are completely cooked through.
  5. Carefully taste the sauce, and season with salt and pepper, if needed.
  6. Serve with rice, quinoa and/or steamed vegetables.
